A favourite low-carb meal: Shrimp'n'salsa'n'sour cream

One of my favourite low-carb meals is very simple.

First, take a some sugar-free salsa (check the label - my favourite brand is Pace). Choose mild, medium or hot... whichever one you prefer. Put a generous helping in a bowl... at least 1 cup. Throw in a couple of tablespoons of full-fat sour cream. (I use a restaurant-style sour cream sold around these parts - it's extremely thick.) Mix'er up. This gives you a pink'ish blend that you'll use as the dip.

Next, you'll need some shrimp. Personally, I prefer to buy the bags of large raw frozen shrimp and cook them. The hot shrimp combined with the coldness of the dip is a very nice contrast.

If you're cooking from raw, you'll need to thaw the shrimp first, of course - either for several hours in the refrigerator or under cold running water for several minutes. Peel the shrimp (if they're not already peeled) and then cook in salted boiling water for 2.5 to 3 minutes. Shrimp cooks extremely fast and it only takes a couple of minutes. Any longer and your large beautiful shrimp will shrink and turn into rubber. (Once I learned how to properly cook raw shrimp, I never bought frozen pre-cooked shrimp again.)

Once you've drained the shrimp, put on a plate along with your bowl of dip, grab a fork and dip each shrimp into the dip. It's absolutely delicious!

I eat this all the time, especially when I'm in a rush and want something simple. If you've planned ahead and pre-thawed the shrimp, this supper takes literally only a few minutes to pull together.

Sweet-free challenge update - January 16, 2008

No sweet-tasting food since December 29, 2008, and all is well!

My big issue is that I'm still bored of the water. I'd kill for something else... like Nestea, or even soda. Not in the plan, though.

Foodwise, I'm fine, although I'm missing the bit of fruit that I ate on low-carb.

I've lost -7 lb during the sweet-free challenge so far... and I feel a loss coming on this week. Monday's hop on the scale will definitely tell the tale! Keep your fingers crossed for me!

I'm doin' 'er not matter what!

LA Weight Loss Centres in Maritimes declare bankruptcy

The LA Weight Loss Centers chain in the Maritime provinces (New Brunswick, Nova Scotia, Prince Edward Island) has gone bankrupt and has reneged on a promise to refund patrons their money for services they did not receive.

Click here to read a CBC report on the matter. Understandably, some patrons are not happy, especially considering the fact that refunds were promised when the Centers first closed their doors.

Debbie Meyer Green Bags

Just a quick note to let readers know that I bought some of these several months ago but have just got around to trying them.

One word: Amazing! As far as I'm concerned, they're absolutely phenomenal and do exactly what they promise to do... extend the life and freshness of food!

The parsley I bought last week is holding up extremely well. If stored in the plastic bags you get in the produce section of the grocery store, the parsley would have been rotted mush by now!

Try them! You won't be disappointed.

Week #82: Stayed the same for a total of -115 lb

After last week's major -7 lb loss, I remained stable this week as my body gets back into the rhythm of eating "normal" things (and amounts) again after the holiday season.

The sweet-free challenge is going very well. I've added ground psyllium husks to my daily intake of food. This is to increase the fibre in my food - and with it, the well-known benefits that fibre provides.

I am planning on buying a piece of exercise equipment in the next couple of months. I'm debating on what is best for me. A treadmill? An elliptical trainer? Something else? I've decided that going for walks is just not going to happen, so I'd be best to just admit that to myself and set myself up at home where I can exercise in private.

I'll continue doing my research. In the meantime, if you have any suggestions, let me know. (I will NOT be joining a gym. Been there, done that... many times. It's a complete waste of money for someone like me.) Any suggestions would be appreciated, of course!

So... that's it for this week. I'm looking forward to a loss next week!
